However, as the blog title explains, a weakness at my core (literally), is candy corn. Every fall I get truly giddy when candy corn --- and its scrumptious little friend mellow creme pumpkins --- are available for purchase. I am usually the first one in line to buy in bulk and continue purchasing throughout the month with full intent to overeat and get the classic Halloween tummy ache (and accompanying <a href="http://teamplexibeast.blogspot.com/2014/05/lets-talk-about-belly-fat.html" target="_blank">belly fat</a>!). If you are giggling at this concept or you wonder how one could love a candy that has texture like candle wax, then read this as if it were your favorite candy or holiday dessert because come on people - we all have a weakness or 10 at this time of year!

Seriously - I can't believe it either. What is the difference? First, let's back up to September when I noticed the change. I had remained strong and not purchased any candy corn despite the constant temptations. However, I had not forgotten that a fellow candy corn addict had given me a bag of candy corn at the end of last year's season. I opened it to "add to fall decor" (ya right). I dug my paw in that bowl pretty much right away and thought "hmmmm - not as good as I remember - stale perhaps?" Maybe...but my son says it tastes great and I still have not wanted to eat it! Whaaaaa? Yup, it's true! And as I have gone to grocery stores following this event I have not purchased candy corn (with no real urge to do so)!</div>

This is not an article about wearing sunscreen. As a lover of summer and the sunshine that comes with it, I want to put forth some positive press about the sun. Our biggest and brightest star out there tends to get a bad rap because of its harmful UV rays. I would guess most families are headed to the beach this summer (good times!) or are hanging out poolside where there are many good reasons to enjoy the sun. Your body receives and truly needs benefits from the sun that are tough to obtain from just food or supplements.</div>

Please don't get me wrong, in giving three cheers for the sun I am not promoting a lack of sunscreen or use of tanning beds. We should all use common sense and avoid risks such as skin cancer. I just want to remind and comfort this audience that some exposure to the sun can actually boost one's health (there is a reason "sunny days" has a happy connotation)!</div>

In a recent news story, NBC reported some beach goers having addict like reactions from the sun. You quickly build up your stamina to the full 30 minutes (2nd day I was able to complete the full workout). After just one week, we really started to notice a difference. I feel much tighter in my core and my arms are getting more defined. My hubby has gotten even faster results (because most guys can just look at a gym and in 2 weeks get buff). So, I looked it up. There is an awful lot of buzz about it on the interwebs. It seems to be the latest trend in coffee. I wonder if Starbucks sells it?</div>

This mystical beverage begins with upgraded coffee. That’s just coffee low in mycotoxins. Oh sheesh. Another word I had to look up. Mycotoxin is a form of fungi. They make their way into coffee by adhering to dried coffee beans. They are incorporated into the process of grinding and roasting the beans and eventually may end up in your cup. While fungus isn’t something we usually need to worry about (i.e. mushrooms) mycotoxins can cause several negative side effects: First and foremost, you simply will not feel as good after drinking a cup of coffee with mycotoxins as you will after drinking one that is free of them. Additionally, these substances can cause diseases that affect your liver, kidneys, smooth muscles, and digestive tract.</div>

<li>A lot of sites suggest brewing your upgraded coffee using filtered water with 2-1/2 heaping tablespoons of freshly ground upgraded coffee beans and using a French Press or Coffee Cone. I think I’ll start with just my plain old coffee maker. </li>

<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">1 cup of Kombucha starter (the liquid (tea) in the jar that will come with the Scoby)</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">1 cup organic sugar – you can use white sugar but make sure it says “cane sugar”</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">4 to 6 tea bags – I use 4 teabags because I don’t like it so strong. Use BLACK OR GREEN TEA ONLY. No herbal teas.</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Breathable cover – I use a paper towel</span></span></li>

<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Boil 1 cup of water. (Filtered is best)</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Add tea bags (4 or 6, I use 4)</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Let the tea sit/swim/relax in the water anywhere between for 5-10 minutes.</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Remove the tea bags</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Add 1 cup of sugar and stir until it is completely dissolved.</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Add 3 cups of cool or room temperature filtered water into your Target container (or Kombucha Brewing Container).</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Add your Scopy and starter liquid to the container with the cool water. </span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">After your brewed tea has cooled a bit, add that as well until you fill up your brewing container.</span></span></li>
<li style="text-align: justify;"><span style="font-family: inherit;"><span style="font-family: inherit;">Cover with paper towel (or other breathable fabric) and secure with a rubber band. It will look something like this:</span></span></li>

<span style="font-family: inherit;">Place in a darker area of your kitchen and let sit for about 10-14 days COMPLETELY UNDISTURBED. </span>You can also let it sit for much longer, but it will turn more bitter as it gets older. Word of caution: <span style="font-family: inherit;">I killed my Scoby when I put it in the moving van - it really wants to be left alone and still. It also sat in the heat for 3 days, so don’t do that either. </span></div>

<span style="font-family: inherit;">When it’s ready, pull out the original </span>Scoby<span style="font-family: inherit;"> and the NEW layer (new </span>Scoby<span style="font-family: inherit;">) and put in a jar with a cup of the new </span>Kombucha<span style="font-family: inherit;"> tea. Refrigerate – this stops the fermentation process. This will become your new starter tea for your next batch.</span></div>

<span style="font-family: inherit;">Now, just poor into bottles! You can filter out the "floaties". I run it through coffee filters when pouring into my bottles. Or your can drink them. They are unsightly, but not harmful.</span></div>

<span style="font-family: inherit;"><span style="font-family: inherit;">You can use your original </span>Scoby<span style="font-family: inherit;"> up to about 6 times I think. But they make a “baby” every time you brew so pretty soon you’ll have more than you need. I threw mine away, gave some away, and tried to dry them for dog treat, but the hubby said NO to that. :-)</span></span></div>

A popular theory is that fructose, a simple sugar or fruit sugar, is the cause. Proponents for fructose say that fructose isn’t the problem. It’s the OVER-CONSUMPTION of fructose that’s the problem. I find this funny because the food industry has it in EVERYTHING. Fructose was once only a small part of our diet, about 15 grams a day that came from fruits and vegetables. Today we average 4 to 5 times that amount. It’s in breakfast cereals, pastries, sodas, fruit drinks, and other sweet foods and beverages. And don’t even get me started on High-fructose corn syrup. That will be another post.</div>

While the body can break down glucose for energy, fructose is primarily metabolized in the liver. It is converted to fat in a process called lipogenesis. This build up is called Non-Alcoholic Fatty Liver Disease, because it looks just like what happens in the livers of people who drink too much alcohol. </div>

Fatty Liver is usually addressed with dietary changes and exercise:</div>

· Exercise 150 minutes per week</div>

· Lose weight – especially the visceral fat around the middle</div>
